One place · Start here

Everything you need to use Galley, in one place.

New here? Do Step 1, then Step 2 — that's the whole path, and both are on this page. Already trained? The forms, links and escalation routes are at the bottom.

The Path

Two steps. That's the whole path.

Everyone does Foundations, then the one track that matches their Galley role. Both are on this page, in that order.

1

Step 1 · Everyone

Galley Foundations

The shared mental model — what Galley is, how data flows, why entering it once correctly matters. One course, every role, every company.

2

Step 2 · Your role

Your role track

One track per Galley role. Find yours in the grid below — it teaches exactly what your permissions let you do, and nothing else.

You stay in read-only View Only until your role track is passed. Passing posts a completion record automatically, and Culinary Admin elevates you from there — you don't need to send anything. Annual refreshers are scheduled for you and arrive as a direct link when they're due.

Step 1 · Everyone starts here

Galley Foundations

What Galley is, how its data flows, and why entering it once correctly matters. Ten short chapters, self-paced. Do this before your role track — every track assumes it.

Required for every role

The whole system, once, at a high level

The big picture, the five-level data hierarchy, the four main areas, inside a recipe, menus, the daily field loop, and where to self-serve vs. escalate.

Start the course asks for your name and email — it's graded and creates your training record. Just browse is open reading, no sign-in, anytime.

10 chapters
  1. What Galley is
  2. The data hierarchy
  3. Creation — how things get made
  4. Search before you create
  5. Canonical & custom units
  6. Conversions & pack sizes
  7. Costing — cost flows up
  8. Inside a recipe
  9. Menus & the field loop
  10. The golden rule & where to get help

Step 2 · Your role

Then take your role's track

Six tracks, one per Galley permission role — these are the same six roles your account can actually be set to. Each track covers what your permissions let you do, the standards that apply, hands-on practice, and a graded check. Not sure which one is yours? It's on your account in Galley under your name, or ask Culinary Admin.

Not part of the learner path

For facilitators & admins

Instructor material and the governing standard. If you are here to be trained, you do not need any of this — Steps 1 and 2 above are the whole path.

Anytime

Forms, links & who to ask

The things people usually go hunting for. Bookmark this page — it's the one link that has all of them.

Escalation & Support
Need a new recipe, ingredient, or vendor item

Culinary Requests form — one form for all of it; the Request Type field routes it. Don't create it yourself.

A recipe, ingredient, or cost looks wrong

Culinary Admin, via the Culinary Requests form — pick Modification / Correction. Include the recipe name and what's wrong.

Allergen or dietary flag on a recipe

RD on site → Director of Nutrition — RDs assign and review flags. Creating a new flag type, or an IDDSI texture standard, is Culinary Admin.

Nutrition forms & documentation

RD on site or Director of Nutrition — all nutrition forms route here.

An invoice hasn't appeared within 24 hours

Your Field Lead — resubmit once, then escalate. Don't receive it manually to work around it.

Account, role, location, or login

Culinary Admin, via the Galley Access Request form — new account, role change, location reassignment, permission adjustment, deactivation.

Training or the Codex doesn't match what you see

Culinary Admin — that's a real finding, not your mistake. Send it through the Culinary Requests form.

Golden rule

When something looks wrong — flag it, don't edit it.
